Chicken Pasta Primavera

Serves 2 people

Ingredients

  • 1/2 cup uncooked whole grain rotini
  • 2 tsp olive oil
  • 1/2 cup shredded chicken
  • 1 onion, vertically sliced
  • 1 tsp oregano
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 2 tomatoes, chopped
  • 1 zucchini, sliced in ribbons
  • 2 tbsp parmesan cheese

Directions

  1. Cook pasta

  2. Heat oil, add chicken, onion, oregano, salt, pepper, and tomato.

  3. Cook for 8-10 min

  4. Combine chicken mix, pasta and zucchini

  5. Top with parmesan cheese
