Shrimp Stir-Fry with Ginger

Serves 2 people

Ingredients

  • 2 tbsp dark sesame oil
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp grated ginger
  • 4 cups stir fry vegetables
  • 14 frozen, pre-cooked shrimp
  • 1 1/2 cups cooked brown rice
  • 2 tbsp sliced almonds
  • 1 scallion, chopped

Directions

  1. Heat oil in large non-stick skillet over medium heat.

  2. Add the soy sauce, honey, ginger, and garlic; cook for 1 min

  3. Add veggies, shrimp and cooked rice; cook for 8 min

  4. Remove from heat. Top with almonds and scallion
