Chicken Lettuce Cups

Serves 4 people

Ingredients

  • 2 tsp peanut oil
  • 1/2 cup vidalia onion, chopped
  • 1 1/2 tsp ginger, minced
  • 1/2 cup water chesnuts
  • 1cup cooked chicken
  • 2 tbsp low-sodium chicken broth
  • 1 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 pinch salt
  • 1 pinch pepper
  • 2 cups cooked brown rice
  • 2 scallions, thinly sliced
  • 4 bibb lettuce leaves
  • 1 tsp black sesame seeds

Directions

  1. Heat oil in a large saute pan over med-low heat

  2. Add onion and saute for 3 min. Reduce heat to low.

  3. Add garlic and ginger. Saute for 1 min

  4. Add water chestnuts. Cook for 1 min

  5. Add chicken, broth, soy sauce, vinegar, and pepper.

  6. Add rice and cook for 3 min

  7. Remove from heat and add scallions

  8. Put in lettuce leaves. Sprinkle with sesame seeds
