Strawberry Cream Cheese Shortcake

Ingredients

  • 2 cups biscuit baking mix
  • 2 T. sugar
  • 1/2 cup butter or margarine, melted
  • 1/2 cup warm water
  • 1 8-oz. can cream cheese, softened
  • 1 14-oz. can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 t. vanilla
  • 1 quart fresh strawberries, cleaned, hulled and chilled
  • 1 pkg. prepared strawberry glaze, chilled
  • Whipped topping or whipped cream

Directions

  1. Preheat oven to 400 degrees.

  2. In small bowl, combine biscuit mix and sugar. Add butter and water; beat until well blended.

  3. Press on bottom of lightly greased 9" square baking pan. Bake 10 to 12 minutes or until toothpick inserted near center comes out clean. Cool.

  4. In large bowl, beat cream until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Spread evenly over shortcake layer. Chill at least 3 hours or until set. Cut into squares.

  5. In a bowl, combine strawberries and glaze. Spoon over shortcake just before serving. Garnish with whipped topping. Store leftovers covered in refrigerator.
