Pea and Cheese Salad

I looked at several recipes and combined the ingredients that I like and created my own recipe.

Serves 8 people

Ingredients

  • 16 ounces frozen peas, thawed
  • 1 C. celery, chopped
  • 1 8 ounce can water chestnuts, drained & chopped
  • 2 hard-boiled eggs, chopped
  • 1/4 C. green onions, chopped
  • 1 C. cheddar cheese, cubed
  • 1/2 C. mayonnaise
  • 1/2 C. sour cream
  • 1 t. sugar
  • Salt & pepper to taste

Directions

  1. In a large bowl, combine the peas, celery, water chestnuts, eggs, onions and cheese.

  2. In a small bowl, combine the mayonnaise, sour cream, sugar, salt & pepper. Stir into pea mixture. Cover and refrigerate for at least 2 hours to blend flavors.

  3. Before serving, stir salad and taste for seasoning; adjust if necessary.
