Naranjilla Bars

Ingredients

  • 1 cup flour
  • 1 tablespoon cornstarch
  • 1/2 cup butter or margarine
  • 1/4 cup powdered sugar
  • 2 eggs, beaten well
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • pinch salt
  • 1/2 cup naranjilla puree or juice
  • 2 tablespoons flour

Directions

  1. In a small bowl, mix together flour, cornstarch, and powdered sugar. Cut in butter well. Pat mixture into a lined 8×8 pan. Bake crust at 350 until lightly browned.

  2. Beat eggs in a medium bowl. Stir in sugar, baking powder, salt, naranjilla juice, and 2 tablespoons flour. Pour into hot crust. Bake until middle is set and edges are browned.

  3. Serve chilled from the freezer. May dust with powdered sugar if desired.
