Potato Skin Popper

Ingredients

  • 3 cup frozen, diced potatos
  • 8 ounces shredded cheddar cheese
  • 16 ounce sour cream
  • 3/4 cup cooked bacon pieces
  • 1/3 cup chopped green onion
  • 1 dash salt & pepper
  • 14 flour tortillas
  • 2 tablespoons melted butter
  • Salsa

Directions

  1. Preheat oven to 350 degrees.

  2. Cook potatos in skillet according to package instructions.

  3. In a large bowl, stir together cooked potatos, cheese, sour cream, bacon, green onions, salt, and pepper.

  4. Warm tortillas.

  5. Spoon equal amounts of the mixture onto the tortillas.

  6. Fold in the sides of each tortilla to meet in the middle.

  7. Roll tortilla “burrito style”.

  8. Brush the outside of each tortilla with melted butter.

  9. Place on baking sheet, seam side down.

  10. Bake for 12 – 15 minutes.

  11. Let cool for 5 minutes.

  12. Cut diagonally into smaller pieces.

  13. Serve with salsa.
