Skillet Spanish Rice

Ingredients

  • 1 T. oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/3 C. chopped bell pepper
  • 1 lb. ground beef
  • 1 can diced tomatoes
  • 1 C. water
  • 1/2 C. ketchup
  • 3/4 C. rice, uncooked
  • 1 t. chili powder
  • 2 t. sugar
  • 1/2 t. Worcestershire sauce
  • 1/2 t. salt, or more, as needed
  • Black pepper
  • Shredded cheese for garnish

Directions

  1. In a large skillet, sauté onion, garlic and pepper in oil. Add the ground beef and brown, stirring and breaking up as it cooks.

  2. Add the tomatoes, water, ketchup, rice, chili powder, sugar, and Worcestershire sauce, salt, and pepper. Bring to a boil over medium-high heat. Reduce heat to medium-low, cover, and cook for about 30 minutes, or until rice is tender.

  3. Top with shredded cheese and cook 5 minutes more until cheese melts.
