Chicken & Onion Curry

Serves 2 people

Ingredients

  • 1 large grilled chicken breast
  • 1 medium yellow onion
  • 1/2 stick butter/margarine
  • 1 cup milk (any)
  • 2 Tbsp Curry Powder
  • 2 Tbsp White all purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp garlic salt
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper

Directions

  1. Grill the chicken breast, seasoned with garlic salt & pepper. Slice length wise.

  2. Prepare the onion (cut about 1/4" thick rings, then slice in 4ths). In a medium frying pan, Saute the onion in butter/margarine, salt, pepper, for about 7-8 minutes on medium, do not brown.

  3. Add the chicken breast to the onion pan and simmer on low while preparing the sauce below. Mix occasionally.

  4. On LOW heat, Melt butter/margarine in small sauce pan. Once melted, stir in all dry seasonings, mix well. Begin adding milk and stirring in as you add. Do this slowly until all milk is added. Increase heat until mixture is gently boiling, while you STIR the entire time. Remove/turn off heat after 1 min gentle boil.

  5. Transfer the “Curry Sauce”, into the other frying pan, stir well while simmering for a few minutes.

  6. Serve hot or on an optional bed of rice.
