Quick-Braised Carrots w/Butter

Cook time: 15 minutes
Serves 4 people

  • 1 lb carrots, peeled and cut into 1/4" slices
  • 2 tbsp butter
  • 1/4 c water
  • 1 tbsp maple syrup
  • salt and pepper to taste
  • minced fresh parsley, mint or cilantro for garnish


  1. Place carrots, butter, water, syrup, salt and pepper in medium saucepan over high heat; bring to a boil and cover.

  2. Turn heat to medium-low and cook for 5 minutes.

  3. Uncover and raise the heat a bit.

  4. Cook, stirring occasionally until the liquid has evaporated and the carrots are cooking in butter.

  5. Lower the heat and continue to cook until tender.

  6. Adjust seasoning if necessary; garnish and serve.
