Southwest Chicken Corn Chowder

Serves 9 people

Ingredients

  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp EVOO
  • 14 oz chicken broth
  • 1 can cream of chicken soup
  • 2 c cubed chicken breast cooked (SW spices)
  • 1 can (4 oz) green chiles
  • 2 cans cream-style corn
  • 1 can evaporated milk, fat-free
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 6 tbsp cheddar, shredded
  • 4 1/2 tsp chopped cilantro

Directions

  1. In large non-stick saucepan, saute onion and garlic in oil until tender.

  2. Stir in broth, soup, chicken and chilis until blended.

  3. Bring to a boil.

  4. Reduce heat; stir in the corn, milk, chili powder and cumin.

  5. Heat through (do not boil).

  6. Sprinkle each serving with cheese and cilantro.
