Naked Chicken Parmesan

Serves 4 people

Ingredients

  • 4 Basic Baked Chicken Breasts (or whatever leftover chicken you’ve got)
  • 8 tbsp (4 oz) part skim, shredded mozzarella cheese
  • 4 tablespoons of tomato sauce or tomato paste
  • 1 tbsp plus one teaspoon Parmesan cheese
  • 1 tsp of garlic powder
  • 1 tbsp of dried oregano

Directions

  1. Pre-heat the broiler to high.

  2. Place chicken cutlets on a baking sheet and top each one with one tablespoon of tomato paste or tomato sauce.

  3. Sprinkle 2 tbsp of mozzarella cheese over the sauce followed by one tsp of Parmesan cheese. Season each breast with garlic powder and oregano.

  4. Place under the broiler for three to five minutes OR until the cheese is melted and the chicken has warmed through.Enjoy!
