Asian Chicken Salad

Ingredients

  • 1 large carrot, peeled & grated
  • 3 C. shredded Napa cabbage
  • 3 C. shredded romaine lettuce
  • 1 red bell pepper, seeded and thinly sliced
  • 2 T. fresh basil mint leaves, chopped
  • 2 C. thinly sliced rotisserie chicken breast
  • 1/2 C. slivered almonds, toasted
  • 1 T. toasted white sesame seeds
  • 1/4 C. oil
  • 2 T. soy sauce
  • 2 T. rice vinegar
  • 1/2 t. granulated sugar
  • Kosher salt and black pepper to taste
  • 1/2 C. chow mien noodles, for garnish

Directions

  1. For the salad: Put the carrot, cabbage, lettuce, red pepper, basil, chicken, almonds, and sesame seeds in a large salad bowl.

  2. For the dressing: In a small bowl, whisk together the oil, soy sauce, vinegar, and sugar until smooth. Season with salt and pepper, to taste.

  3. Pour the dressing over the salad and toss well. Garnish with the chow mien noodles and serve.
