Potatoes au Gratin

Ingredients

  • 1 1/2 lb. red potatoes
  • 2 T. butter
  • 2 T. flour
  • 2 C. whole milk
  • Salt and white pepper
  • 3 oz+ grated Cheddar cheese
  • 3 oz+ grated Monterey cheese

Directions

  1. Peel and boil the potatoes until barely fork tender. Drain, let cool slightly; slice.

  2. Preheat the oven to 400°. Butter a 9X12 baking dish.

  3. In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 2 minutes. Whisk in the milk and cook until slightly thick, about 4 to 6 minutes. Season with salt and pepper. Remove from the heat and whisk in the cheeses.

  4. In a mixing bowl, toss the potatoes with salt and pepper. Fold in the cheese sauce and pour into the prepared dish. Sprinkle the top of the potatoes with additional cheese, if desired.

  5. Place in the oven and bake until golden brown, about 20 minutes. Remove from the oven and cool for a couple of minutes before serving.
