Italian Sausage Veggie Bake

Cook time: 60 minutes
Serves 10 people

Ingredients

  • 1.25 lbs of HOT Italian Sausage (5-links)
  • 8 small Red or Yukon Gold Potatoes
  • 2 small/medium yellow onions
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 green bell peppers
  • 1 pkg mushrooms (8 oz)
  • 2 TBSP garlic salt
  • 6 TBSP Italian Seasoning
  • 4 TBSP Olive Oil
  • 1 tsp black pepper

Directions

  1. Cut all veggies & sausage into bite size pieces. It works best to SPLIT everything evenly into two large mixing bowls.

  2. Preheat oven to 500 F.

  3. Drizzle each bowl w/Olive Oil, sprinkle garlic salt & pepper, cover aggressively w/Italian seasoning and stir. Do this 3x per bowl.

  4. Pan coat large baking pan. Pour both bowls into pan and cover with foil.

  5. Bake for 30 minutes at 500 F, covered.

  6. Remove, uncover, stir, bake for another 30 minutes at 450 F or until lightly browned.
