Pigs’ Ears Pastries

Ingredients

  • 1 sheet frozen puff pastry, defrosted (about 8 oz.)
  • Sugar

Directions

  1. Preheat oven to 400

  2. Cover pastry board with generous sprinkling of sugar.

  3. Spread pastry out on board and coat top with layer of sugar.

  4. Roll into a rectangle about 1/4" thick.

  5. Fold long sides inward, so two edges meet in seam down center. Dust with sugar.

  6. Fold edges toward center again.

  7. Sprinkle with suar and fold in half.

  8. Wrap in plastic and chill until firm.

  9. Line two cookie sheets with parchment paper.

  10. With sharp knife, clide dough at 1/16" thick. Place slices 3 inches apart on baking sheet.

  11. Sprinkle tops of pastries with pinch of sugar.

  12. Bake 8 minutes. Remove from oven and turn cookies over.

  13. Bake 7 minutes longer, until crisp and sugar is caramelized.

  14. Cool on wire rack and keep stored in airtight container to preserve freshness.
