Smoky Chipotle Pork Loin

Ingredients

  • 1 1/2 teaspoons garlic salt
  • 1 teaspoon ground chipotle chile pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 (3 1/2 lb) boneless pork loin roast

Directions

  1. Combine the garlic salt, chipotle chile pepper, cumin, and coriander; rub over pork.

  2. Cover and refrigerate 2-8 hours.

  3. Let stand at room temperature 30 minutes before cooking.

  4. Preheat oven to 375°.

  5. Line a rimmed baking sheet with foil and place an ovenproof wire rack on top.

  6. Place pork on rack; bake for 1 hour or until a meat thermometer inserted into the thickest portion reads 145° or desired degree of doneness (for me, that is 160°).

  7. Carefully transfer pork to a serving platter or carving board.
