Rice paper rolls

Ingredients

  • 350g skinless, cooked chicken, shredded
  • 2 tbsp chopped roasted peanuts
  • 2 tbsp chopped fresh coriander
  • 1 carrot, grated
  • 10cm piece of cucumber, grated
  • 4 spring onions, finely chopped
  • 375g packet rice paper wrappers
  • 2 tbsp hoisin sauce, plus extra to serve

Directions

  1. Mix the chicken, peanuts, coriander, carrot, cucumber and spring onions in a medium bowl. Set aside.

  2. Soften the rice paper wrappers by dipping each in a bowl of warm water and counting to 10 before spreading them out on a flat board. Spread a little hoisin sauce on each wrapper and top with some of the chicken mixture. Fold in the sides, then roll up to enclose the filling. Serve at once with the extra hoisin sauce for dipping.
