Easy-peasy fried rice

Ingredients

  • 2 tbsp groundnut oil
  • 1 onion, finely chopped
  • 4 rashers rindless bacon, chopped
  • 100g jasmine rice, cooked according to packet instructions and drained
  • 50g frozen peas
  • 2 eggs, beaten
  • 1 tbsp light soy sauce
  • 1/2 tsp sesame oil
  • chopped spring onions, to garnish

Directions

  1. Heat the oil in a wok over a high heat. You can test if it’s hot enough by dropping in a few breadcrumbs, which should sizzle straight away. Add the onion and bacon, and stir-fry for 1-2 minutes until the bacon begins to crisp. Add the rice and peas and cook, stirring constantly for 2-3 minutes. Add the eggs and stir-fry until the eggs are cooked through. Stir in the soy sauce and sesame oil and serve immediately, garnished with the spring onions.
