Louisiana Style Red Beans and Rice

Ingredients

  • 1 large onion, diced small
  • 1 tbsp minced garlic
  • 1 tbsp creole seasoning
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt and black pepper to taste
  • 4 cups cooked red beans, or 3 cups canned beans, rinsed and drained and add 1/2 more chicken stock
  • 3 cups diced lean ham
  • 3 cups chicken stock
  • 1 tbsp Worchestershire sauce
  • 1 tsp Tabasco sauce
  • 2-3 bay leaves
  • 1 tsp red wine vinegar
  • 3 cups cooked rice

Directions

  1. Add ingredients into slow cooker.

  2. Cook on high 4-8 hours until beans are dissolved.

  3. Serve hot, topped with rice.
