Skillet Cheesy Chicken and Rice

Ingredients

  • 1 T vegetable oil
  • 1 1/4 lb chicken breasts
  • 1 can cream of chicken
  • 1 1/2 c water
  • 1/2 t onion powder
  • 1/4 t pepper
  • 1 c uncooked regular long grain rice
  • 2 c frozen mixed veggies
  • 1/2 c shredded cheese

Directions

  1. Heat oil in 12 in skillet over medium high heat. Add chicken and cook 10 min or until well browned on both sides. Remove chicken from skillet. Stir soup, water, onion powder, pepper and rice in skillet and heat to a boil. Reduce heat to low. Cover and cook 15 min stirring once halfway through. Stir in veggies and return chicken to skillet. Sprinkle with cheese. Cover and cook 5 min or until chicken is thoroughly cooked and rice is tender.
