Stuffed Peppers

Ingredients

  • 3 peppers, halved and deseeded
  • 4 tbsp olive oil
  • 150g ricotta or goat's cheese
  • 150g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • grated zest of 1 lemon
  • 1 garlic clove, crushed
  • handful of fresh basil leaves, torn

Directions

  1. Preheat the oven to 180˚C/fan 160˚C/gas 4. Toss the peppers in half the oil, then place on a baking tray. Mix the ricotta or goat’s cheese, tomatoes, onion, lemon zest, garlic and the basil, then use to fill the peppers. Drizzle with remaining oil and bake for 20-25 minutes. Serve with slices of ham or grilled gammon and a fresh green salad.
