Sausage bake with rocket pesto

Ingredients

  • 600g small salad or new potatoes, quartered
  • 2 garlic cloves, crushed
  • 4 tbsp extra-virgin olive oil
  • 2 tbsp chopped fresh rosemary
  • 12 chipolatas
  • 350g vine-ripened cherry tomatoes

Directions

  1. Preheat the oven to 190˚C/fan 170˚C/gas 5. Put the potatoes in a large roasting tray with the garlic, oil and rosemary. Season, then toss together. Bake for 20 minutes. Then remove from the oven.

  2. Prick the chipolatas with a fork, then add to the potatoes, tossing in the oil. Return to the oven for 20 minutes, then add the tomatoes. Season with salt and black pepper and return to the oven once more for 5 minutes or until the tomatoes start to soften. Serve with the rocket pesto, a green salad and crusty bread.
