Spiced sultana griddle scones

Ingredients

  • 225g self-raising flour
  • 1/4 tsp ground mixed spice
  • 50g butter
  • 50g caster sugar
  • 25g sultanas
  • grated zest of 1 orange
  • 1 egg, beaten
  • 4 tbsp milk

Directions

  1. Sift the flour and ground spice together in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar, sultanas and orange zest and make a well in the centre. Add the egg and sufficient milk to make a firm dough.

  2. On a lightly floured surface, roll out to a 1cm thickness and cut into triangles. Cook on a moderately greased griddle pan or heavy-based frying pan for about 5 minutes each side until the scones are browned and cooked. Spread with butter, if you like.
