Steamed treacle pudding

Ingredients

  • finely grated zest and juice of 1 orange
  • 3 tbsp golden syrup
  • 175g self-raising flour, sifted
  • 1 tsp baking powder
  • 175g unsalted butter, softened
  • 175g caster or brown sugar
  • 3 eggs

Directions

  1. Grease a 1.2-litre pudding basin.

  2. Stir half the zest into the golden syrup and spoon into the basin. Mix the flour, baking powder, butter, sugar, eggs and remaining zest in a food processor. (It should be a dropping consistency. If not, add a little orange juice.) Spoon into the pudding basin, then cover. Place in a pan filled with enough water to reach halfway up the basin. Bring to the boil, then reduce the heat to low and steam, covered, for 2 hours. stand for 10 minutes.

  3. Run a knife around the side of the pudding and turn out. Pour over the sauce. Serve with cream.
