Corn Muffins

YUM! I added 1/2-3/4 cup sugar (maybe 2/3) it they were plenty sweet for us!

Ingredients

  • 1 1/2 cup flour
  • 1 cup sugar
  • 3/4 cup cornmeal
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup butter
  • 1 cup milk divided

Directions

  1. Combine the dry ingredients

  2. Add eggs, butter and half the milk and mix then add the other half of the milk until just combined

  3. Fill greased muffin tins 3/4 full

  4. Bake at 350 25-30 minutes.
