Sweet Potato Cornbread

Ingredients

  • 2 cups self-rising white cornmeal mix
  • 3 tbsp sugar
  • 1/4 tsp pumpkin pie spice
  • 5 large eggs
  • 2 cups cooked mashed sweet potatoes ( 1 1/2 lbs)
  • 1 8 ounce sour cream
  • 1/2 cup butter, melted

Directions

  1. eheat oven to 425.

  2. Stir together first 3 ingredients; make a well

  3. Whisk together eggs and next 3 ingredients

  4. Add to cornmeal mixture, stirring just until moistened.

  5. Spoon batter into lightly greased 9 inch square pan.

  6. Bake at 425 for 35 minutes or until golden brown
