Fiesta Chicken Rolls

Ingredients

  • 8 chicken breast halves, skinned and boned
  • 1/4 cup shredded Cheddar cheese
  • 1 (3 oz.) pkg of Cream cheese, softened
  • 2 Tbsp. butter, softened
  • 2 Tbsp. chopped green chiles
  • 2 Tbsp grated onion
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 3/4 Cups bit sized Cheddar cheese crackers, crushed
  • 1 tsp. chili powder
  • 1/4 tsp ground cumin
  • 1/4 tsp ground red pepper
  • 1/8 tsp garlic powder
  • 1/4 cup butter, melted

Directions

  1. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4 inchy thickness, using a meat mallet or rolling pin. Set aside.

  2. Combine Cheddar cheese and next 6 ingredients in a small bowl; stir well.

  3. Spoon cheese mixture evenly over center of each chicken breast half. Roll up jellyroll fashion, starting with short end; secure with wooden picks.

  4. Combine cracker crumbs, chili powder, cumin, red pepper and garlic powder in small bowl; stir well.

  5. Dip chicken in melted butter; dredge in crumb mixture. Place seam side down in 13 × 9 inch baking dish.

  6. Bake uncovered at 400 degrees for 20 to 25 minutes or until done. Remove wooden picks before serving.
