Applesauce Cake

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon McCormick® Ground Cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon McCormick® Ground Nutmeg
  • 1/4 teaspoon McCormick® Ground Cloves
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter or margarine, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup applesauce
  • 1 cup chopped golden seedless raisins
  • 1 tablespoon flour
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350°F. Lightly grease and flour 10-inch fluted tube pan. Mix first 7 ingredients; set aside.

  2. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs; beat well. Beat in flour mixture alternately with applesauce.

  3. Toss raisins with remaining 1 tablespoon flour. Stir into batter with pecans. Pour into prepared pan.

  4. Bake 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on wire rack.
