Fettuccine with Spinach Sauce

Ingredients

  • 2 Tbsp. Unsalted butter
  • 1 13.5 oz can Popeye Spinach, drained
  • 1/2 cup Ricotta cheese
  • 1/4 cup Parmesan cheese, grated
  • 1/4 to 1/2 cup Milk
  • 1/8 tsp. Pepper
  • 7 to 8 oz. Fettuccine

  2. Melt butter in medium skillet over medium-high heat. Stir in spinach. Cook 4 to 5 minutes until liquid is evaporated, stirring occasionally. Add cheeses, 1/4 cup milk and pepper; add more milk if thinner sauce is desired. Cover, reduce heat to low, and cook 2 to 3 minutes until just hot, stirring occasionally to prevent sauce from scorching. (Sauce should be warmed, not cooked.) Prepare pasta according to package directions. Serve hot with spinach sauce. Pass additional grated Parmesan cheese separately.

  3. Microwave Method: Place butter in 1-quart microwave-safe casserole. Cook on high (100% power) 1 minute until melted. Stir in spinach. Cook, uncovered, on medium-high (70% power) 2 to 3 minutes until heated through, stirring once. Add cheeses, 1/4 cup milk, and pepper. Stir, cover, and cook on medium-high (70% power) 3 to 4 minutes until heated through, stirring once. Prepare pasta and serve as directed above.
