Linzer Torte Cookies Oma/Mom

a delicious holiday cookie, takes some time but well worth it. Delicious!

Serves 24 people

Ingredients

  • 1 Cup Sugar
  • 3 Cups Flour
  • 2 tsp. cinnamon
  • 1 pinch each: ground cloves, salt
  • 1 Cup ground, blanched almonds
  • 2 Tablespoons grated lemon peel
  • 1 Cup butter
  • 1 egg, slightly beaten
  • 1/4 Cup red-raspberry jam
  • 1 egg yolk, beaten with 1 tablespoon water

Directions

  1. Preheat oven 375F.

  2. Grease cookie sheet,set aside.

  3. Combine in mixing bowl: sugar,flour,cinnamon,cloves,and salt.

  4. Add almonds,and lemon peel; stir to mix.

  5. Cut butter into flour mixture with pastry blender or knives until mixture has even course texture.

  6. Stir in egg, mix until dough holds together.

  7. Divide dough in half, wrap each in plastic wrap.

  8. Chill for 1 hour.

  9. On flour surface,using rolling pin, roll half of dough 1/8 thick.

  10. Cut with scalloped side of cutter with the center set to cut a solid cookie.

  11. Lift carefully,place on cookie sheet.

  12. Place 1/2 tsp. of jam in center of cookie,keep1/2 clear around edge of cookie.

  13. Roll the second half of dough to 1/8 in. thick and cut with scalloped side of cutter, set to cut out the middle of the cookie.

  14. Remove centers. and place rings on top of jam-covered cookies.

  15. Brush tops with egg-yolk mixture.

  16. Bake 10-12 minutes, or until golden brown.
