Grandma’s Fresh Mushroom Soup

Serves 4 people

Ingredients

  • 4 Tbs. butter
  • 3 green onions
  • 12 oz. fresh mushrooms
  • 2 cans chicken broth
  • 2 Tbs flour
  • 1 cup half & half
  • 1/2 tsp. salt

Directions

  1. Slice mushrooms and green onion

  2. Sautee in bottom of pan a few minuntes

  3. Add 2 cans of chicken broth and enough water to make a quart.

  4. Bring to a boil

  5. Cover & simmer 15 minutes

  6. Meanwhile, melt 2 Tbs of butter and add 2 Tbs flour w/wisk until it bubbles

  7. Take it off the burner.

  8. Pour a few spoonfuls of soup in and blend.

  9. Then, add remainder to the soup and wisk.

  10. Add 1/2 tsp of salt and 1 cup of half & half
