Beef Enchiladas

Serves 4 people

Ingredients

  • 1 lb ground beef
  • 1 jar enchilada sauce
  • 2 cups shredded cheese
  • 10 - 12 6 inch flour tortillas
  • 2 tbsp chili powder
  • 2 cups salsa
  • Shredded Lettuce
  • Diced tomatoes
  • Sour Cream

Directions

  1. Brown beef in skillet, drain.

  2. Stir in 1/2 cup salsa, 1/2 cup sauce, & 1 cup cheese. Set aside.

  3. Mix 3/4 cup sauce & chili powder in small bowl.

  4. Rub mixture onto both sides of each tortilla putting wax paper between tortillas.

  5. Spoon about 2 – 3 tbsp of meat mixture into each tortilla. Roll up & place seam side down in greased baking pan.

  6. Pour remaining sauce, salsa, & cheese on top.

  7. Bake 20 – 30 minutes.
