Peanut Noodles

This can be served warmor at room temperature as a side dish OR cold as a salad. Great with chicken satay.

Ingredients

  • 3 T. sesame seeds
  • 12 oz. linguine
  • 1/4 C. creamy peanut butter
  • 3 T. soy sauce
  • 2 T. rice vinegar
  • 1 T. canola oil
  • 1 T. grated fresh ginger
  • 1 T. honey
  • 1 T. Sriracha
  • 1 t. sesame oil
  • Zest and juice of 1/2 lime

Directions

  1. Preheat the oven to 350°.

  2. Place the sesame seeds in a pie tin and toast in the oven until light golden in color, 4 to 6 minutes, and set aside.

  3. Cook the pasta until al dente. Do not overcook. Drain, reserving some of the starchy pasta water, rinse with warm water and set aside.

  4. For the sauce: Place the peanut butter in a saucepan on medium heat to soften. Whisk in the soy sauce, vinegar, canola oil, ginger, honey, Sriracha, sesame oil and lime zest and juice.

  5. Mix the pasta, sesame seeds and sauce. Thin with the starchy pasta water if needed, 1 tablespoon at a time.
