Shrimp & Rice Casserole

Ingredients

  • 1 6-oz box of Uncle Ben's Long Grain & Wild Rice
  • 2 Tbs butter or oil
  • 1 cup diced green pepper
  • 1 cup diced onion
  • 1 cup sliced celery
  • 1 1/2 lbs cooked shrimp
  • 1 tsp curry powder
  • 1 tsp Worchestershire sauce
  • 3/4 cup mayonnaise
  • Salt & pepper to taste
  • 1/2 cup white wine
  • Minced parsley

Directions

  1. Cook rice according to directions and set aside

  2. Saute green pepper, onion, and celery in butter until tender

  3. Combine with rice and all ingredients except parsley

  4. Pour into a greased 9 by 13 inch casserole or a round 2 qt casserole

  5. Cover and bake in preheated 350 degree oven for 45 minutes or until thoroughly heated

  6. Sprinkle with parsley and serve
