Sharon’s Potato Salad

Served warm, it’s almost like mashed potatoes

Ingredients

  • 5 eggs
  • 10 lb potatoes
  • Sweet salad cubes
  • Onion, finely chopped
  • Hellman's mayonnaise
  • Salt and pepper
  • Yellow Mustard

Directions

  1. Peel and chop the potatoes into medium chunks

  2. Fill large pot with salted cold water and put in the potato chunks and the eggs

  3. Boil the potatoes with the eggs. When the potaotes are done, so are the eggs.

  4. Take the eggs out and set aside in ice water

  5. Drain the potatoes and let them cool slightly while you peel and finely chop the eggs

  6. Mix together with sweet salad cubes, about 2 Tbs of the juice from the salad cubes, and the finely chopped onions along with your finely chopped eggs and cooled potatoes

  7. Add the mayonnaise a little at a time to taste

  8. Salt and pepper, and add a little yellow mustard to taste for a bit of tang

  9. Mix well and serve while still warm.
