Vinegar Chocolate Cake w/Coconut-Pecan Frosting

Ingredients

  • CAKE:
  • 2 cups sugar
  • 3 cups flour
  • 6 tbsp cocoa
  • 2 tsp soda
  • 1 tsp salt
  • 2 cups cold water
  • 3/4 cup oil
  • 2 tbsp vinegar
  • 2 tsp vanilla
  • 1 egg
  • FROSTING:
  • 2 eggs, beaten
  • 1 can evaporated milk (12 oz)
  • 1 1/3 cup sugar
  • 1/2 cup butter
  • 2 2/3 cup coconut (flaked)
  • 1 cup pecans (chopped)

Directions

  1. CAKE:

  2. Sift sugar, flour cocoa, soda, and salt.

  3. Combine liquid ingredients and add to dry ingredients.

  4. Pour into greased 9 X 13 cake pan.

  5. Bake at 350 degrees about 25 minutes or until toothpick comes out clean.

  6. FROSTING:

  7. In a sauce pan, beat eggs.

  8. Stir in milk, sugar butter.

  9. Cook over medium heat for 12 minutes or until thick and bubbly.

  10. Stir in coconut and pecans.

  11. Cool and frost two 8" round or one 9 X 13 pan cake
