Brinjal Thoran

Ingredients

  • Brinjal(big) 1 nos
  • Turmeric powder 1/2 tsp
  • Chilly powder 1 1/2 tsp
  • Pepper powder 1 tsp
  • Garam masala 1/2 tsp
  • Grated coconut 4 tbsp
  • Garlic 2 nos
  • Cumin seeds 1/2 tsp
  • Dry red chillies 2 nos
  • Onion 1 small
  • Mustard seeds 1/2 tsp
  • Curry leaves A few
  • Salt to taste
  • Oil for frying

Directions

  1. Cut brinjal to thin round pieces each about 1 cm thick.

  2. Marinate the above with turmeric powder, chilly powder and salt. Keep aside .

  3. Heat some oil in a pan.

  4. Fry the marinated brinjal pieces till brown. Drain and keep aside.

  5. Heat 1 tbsp oil in a pan.

  6. Season mustard seeds.

  7. Add curry leaves and red chillies.

  8. Add onions sliced lengthwise and saute well till light brown.

  9. Add the fried brinjal pieces now.

  10. Add garam masala, pepper powder and salt.

  11. Saute well.

  12. Grind together grated coconut, cumin seeds and garlic pods to a paste and add this to the above fried vegetable.

  13. Mix well.
