Beef Pot Roast

Serves 8 people

Ingredients

  • 2 tsp. olive oil
  • 4 lbs. boneless chuck roast
  • 1 onion chopped
  • 2 cloves garlic 2 bay leaves
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Preheat oven to 325 degrees

  2. Heat in a heavy Dutch oven on top of the stove over medium high heat. Add oil, and sear meat for 4 minutes. Turn meat and sear 3 – 4 minutes. Remove from pan. Arrange onion, garlic, and bay leaf in the bottom of the pan and sprinkle with salt & pepper.

  3. Cook in oven for 30 minutes at 325 degrees. Reduce tem. to 300 degrees and cook 1 1/2 hours

  4. Remove roast to a platter and let rest 15 minutes. Slice and top with onion and gravy.
