Chicken Satay

Serves 4 people

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1/2 cup plus 1 tsp tamari
  • Juice of one orange
  • Juice of one lime
  • 3 garlic cloves
  • 1/4 cup rice wine vinegar
  • 2 tbsp almond butter
  • 1 tbsp honey
  • 1 tbsp fresh ginger minced
  • 1/4 tsp sesame oil

Directions

  1. Slice chicken breast into strips.

  2. In medium bowl mix tamari, juices, and 2 garlic cloves.

  3. Add chicken and marinate for at least an hour or overnite.

  4. In blender, place rice wine vinegar, almond butter, honey, ginger, sesame oil, remaining tsp of tamari and remaining garlic clove.

  5. Blend until smooth.

  6. Drizzle over chicken and cook.
