Broccoli and Cheese Soup

Ingredients

  • 1 cup chopped onions
  • 2 cloves garlic minced
  • 3 cups fat free low sodium chicken broth
  • 16 oz package frozen chopped broccoli
  • 2/12 cups 2% milk
  • 1/3 cup flour
  • 1/4 teaspoon pepper
  • 8 oz light processed cheese, cubed

Directions

  1. Heat a large Dutch oven coated with cooking spray. Add onion and garlic and saute for 3 minutes.

  2. Add broth and broccoli.

  3. Bring mixture to a boil. Reduce heat and simmer for 10 minutes.

  4. Combine milk and flour, stirring until well blended. Add flour mixture to broccoli. Cook for 5 minutes or until slightly thick, stirring constantly.

  5. Stir in pepper.

  6. Remove from heat and add cheese, stirring until cheese melts.
