Cheesey Potatoes

Ingredients

  • 1 lbs. Bacon Crumbles
  • 5 lbs. Red Potatoes
  • 1 Onion
  • 1 Red Bell Pepper
  • 8 oz. Fresh Sliced Mushrooms
  • 1 tbsp. Salt
  • 1 tbsp. Garlic Powder
  • 1/4 cup Dried Parsley Leaves
  • 2 tsp. Black Pepper
  • 1 lbs. Grated Cheddar Cheese
  • 1 oz Cream Cheese

Directions

  1. Cook bacon drain oil. Wash and slice potatoes ¼to ½ inch thick. Chop onion and peppers.

  2. Layer all ingredients and spices in Dutch oven, except cheese and cream cheese. Cook until potatoes are tender, stirring every 15 minutes. When potatoes are tender add cream cheese and stir in ¾ pounds of cheddar cheese, sprinkle remaining cheese on top. Cook until cheese is melted.
