Potato Pick-ups

Serves 6 people

Ingredients

  • 1/3 cup flour
  • 1/3 cup Parmesan cheese
  • 1 t. paprika
  • 3 large potatoes, scrubbed and cut into 8 wedges each
  • 1/3 cup milk
  • 1/4 cup margarine, melted
  • 1 16-oz. container sour cream
  • 1/2 cup bacon, cooked and crumbled
  • 2 T. chives
  • 1/2 t. garlic powder

Directions

  1. Heat oven to 400 degrees.

  2. In a 9" pie plate combine flour, cheese and paprika. Mix well. Dip potatoes in milk and then in flour mixture. Place skin side down on a jelly roll pan, or small cookie sheet with sides. Drizzle with margarine.

  3. Bake 45 to 50 minutes or until potatoes are fork-tender and browned.

  4. Meanwhile, in a medium bowl, stir together sour cream, bacon, chives and garlic powder.

  5. Arrange hot potato wedges in a fan around a bowl with dip.
