Jalapeno Cream Cheese Chicken Enchiladas

Ingredients

  • 3 skinless, boneless chicken breast halves
  • 1 tsp cayenne powder
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • 2 TBSP butter
  • 1 large onion - minced
  • 2 jalapeno peppers - seeded/minced
  • 1 (8oz) cream cheese
  • 1/2 tsp cayenne powder
  • 1 TBSP garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 (28oz) can green enchilada sauce
  • 7 flour tortillas
  • 8 oz montery jack cheese

Directions

  1. 350 deg. oven

  2. Season check with 1 tsp cayenne pepper, 1/2 tsp garlic powder, salt and pepper.

  3. Place in baking dish – bake til no longer pink – 45 min. (cool and shred)

  4. Heat butter in large skillet on medium heat an cook onion and jalapenos – 5 min.

  5. Stir in cream cheese in chunks – allow to melt and soften

  6. Mix 1/2 tsp cayenne pepper, 1 TBSP garlic powder, paprika, chili powder and cumin

  7. Mix some in with cooked chicken

  8. Pour 1/2 sauce in bottom of pan

  9. Make enchiladas with cheese and chicken

  10. Pour sauce over and sprinkle with cheese

  11. Cook 30-35 min.
