Rhubarb Crumble

This recipe is best with Grandma Bertie’s Father’s rhubarb, some of which is now planted in Charley and Kristin’s garden. Roberta’s notes on her original recipe card read, “I find that half of the oatmeal mixture is enough and save the remaining in a jar for another time.”

Ingredients

  • 6 cups rhubarb cut into one-inch pieces.
  • 1 1/2 cups sugar
  • 3 Tablespoons flour
  • 2 eggs
  • 1 cup flour
  • 1 cup old-fashioned rolled oats
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 stick melted butter

Directions

  1. Mix rhubarb, sugar, flour and eggs and add to baking dish.

  2. Mix flour, oats, salt, sugar and melted butter.

  3. Cover and bake until done (bubbling and slightly browner) about 50-60 minutes.
