Peppered Scallops

Ingredients

  • 2 tbsp butter
  • 2 garlic cloves, finely chopped
  • 3 scallions, sliced
  • 2 pounds sea scallops
  • 1 red bell pepper, cut into thin strips
  • 1 yellow bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1/2 cup orange juice

Directions

  1. Heat butter in large nonstick skillet.

  2. Add garlic and scallions, saute for 2 minutes.

  3. Add scallops, saute for 3 minutes. Add peppers, saute for 3 minutes.

  4. Add orange juice, cook for 2 minutes, or until scallops are cooked through.
