Steak-N-Bake

Serves 4 people

Ingredients

  • 4 medium baking potatoes
  • 12 to 16 oz. boneless beef sirloin steak,
  • cut 1 inch thick
  • 2 cups fresh baby spinach
  • 3/4 cup bottled blue cheese salad dressing 1 small red onion, cut in thin wedges

Directions

  1. Wash potatoes; pierce with fork. Arrange

  2. potatoes on microwave-safe plate in spoke

  3. formation, leaving 1 inch between each

  4. potato. Micro-cook on high (100% power),

  5. uncovered, 14 to 18 minutes or until tender.

  6. (Or bake potatoes in 425°F oven for 40 to

  7. 60 minutes.) Let stand 5 minutes.

  8. Meanwhile, preheat broiler. Trim fat

  9. from steak. Place meat on unheated rack of

  10. broiler pan. Broil 3 to 4 inches from heat

  11. for 16 to 18 minutes for medium-rare

  12. (145°F) or 19 to 21 minutes for medium

  13. (160°F), turning once halfway through

  14. broiling. Transfer meat to cutting board; let

  15. stand 5 minutes. Or, to grill, prepare steak

  16. as above. For charcoal grill, grill on rack of

  17. uncovered grill directly over medium coals

  18. 18 to 22 minutes for medium (160°F),

  19. turning once. For gas grill, preheat grill.

  20. Reduce heat to medium. Place meat on grill

  21. rack over heat. Cover; grill as above.

  22. To serve, roll each potato gently under your hand. Cut an “X” in top of potato.

  23. Press in and up on ends of potato. Cut steak

  24. in bite-size strips. Top potatoes with beef

  25. strips and spinach; drizzle with dressing.

  26. Top with onion wedges
