American Goulash

Ingredients

  • 1/2 lb. elbow pasta
  • Olive oil drizzle
  • 1 lb. ground beef
  • 1 onion sliced
  • Salt and pepper
  • 2 cloves garlic
  • 2 T. tomato paste
  • 1 28 oz. diced tomatoes
  • 1 t. red pepper flakes optional
  • 3 T. Parmesan cheese

Directions

  1. In a large pot cook elbow pasta according to directions. Drain and set aside reserving some pasta water.

  2. In a large sauté pan heat oil over medium-high heat. Add onions and sauté until translucent. Season with salt and pepper. Mince the garlic cloves and add them to the onions. Add the ground beef and cook until brown. Add tomato paste and canned tomatoes and stir to combine. Add chili flakes to taste.

  3. Once cooked, add pasta. Add a little of the pasta water to the pan to help season the sauce. Add some freshly grated parmesan cheese and remove from heat and serve.
