Chipotle Potatoes

Serves 4 people

Ingredients

  • 4 large Idaho potatoes, unpeeled, cut into 1 inch cubes
  • 1/2 7 ounce can chipotle chiles in adobo, chopped
  • 2 cloves garlic minced
  • pinch cumin
  • 1 tablespoon tomato paste
  • pinch salt
  • pinch freshly ground black pepper

Directions

  1. Bring a pot of water to a boil over medium heat. Add potatoes and cook for 15 minutes or until tender. Remove from heat, strain, return to pan, and set aside.

  2. In a small bowl, mix chiles, garlic, cumin, tomato paste, salt and pepper

  3. Add chile mixture to potatoes and heat over medium for 3 to 5 minutes, until warmed through. Serve immediately.
