Chicken and Garlic Potatoes

Ingredients

  • 4 medium potatoes, peeled and sliced
  • 1 large onion, cut into small wedges
  • 6 bone-in skinless chicken breasts
  • 1 tsp. dried tarragon
  • 1 tsp. rubbed sage
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 whole garlic bulb
  • 3 tsp. olive oil

Directions

  1. Place potatoes and onion in a greased 9 × 13 baking dish. Top with chicken. Combine Tarragon, Sage, salt and pepper. Sprinkle over chicken. Cut the top off the Garlic bulb so each bulb is exposed. Place cut side up in middle of baking dish. Drizzle over chicken. Cover and bake at 350 degrees for 60 min.

  2. or until juices in chicken run clear. Uncover and bake additional 15 minutes and garlic is soft. Cool garlic for 5 minutes. Gently squeeze Garlic into a small bowl and mash. Toss Garlic with Potatoes and onions and gently toss. Arrange around Chicken
